Italian cuisine is one of the most well-known andloved ones, especially pasta and various pasta dressings. One of the foundations can be considered carbonate sauce. It is prepared quite simply, does not require too much money. Different recipes exist: caramel sauce with cream and without them, with garlic, from different types of brisket, with black pepper, with pancetta, etc. Each person chooses according to their taste, according to their preferences. There are many options for how to prepare Carbonara sauce, but for now we will dwell on the more traditional and tasty. Products that we need:
- Smoked bacon - 250 grams.
- Cream - 200 ml.
- Eggs - 5 pieces.
- Parmesan - 150 grams.
- Garlic - 1 clove.
- Spaghetti - at your discretion.
- Black pepper - to taste.
- Olive oil - 3 tablespoons.

Pancetta is a piece of fatty pork brisket, dried in spices, herbs and salt. In some Italian areas, they use rosemary and sage. Smoked bacon or pancetta should be placed in the freezer before cooking, so that it is slightly frozen and it was easier to cut. Large or small pieces do, depends on your desire. Then the Parmesan cheese will need to be grated, preferably shallow. We break the eggs and separate the yolks from the proteins. The first whisk whisk and briefly put off. In the meantime, spaghetti is boiled in water with the addition of salt to such a state, when they still remain a little solid (later soften in hot sauce). - champignons - 20 grams;
- Spaghetti - 200 grams;
- cream - 200 ml;
- bacon - 100 grams;
- egg yolks - 2 pieces - parmesan - 100 grams;
- Ground black pepper - to taste;
- Olive oil - 1 tablespoon;
- salt - a couple of small pinches.
Boil spaghetti, small piecescut the bacon. Washed and peeled mushrooms are also cut, cheese three on a grater. Warm the oil in a frying pan and fry in it bacon and champignons. Yolks with cream beat a little, adding pepper, salt and cheese. All this, stirring, add to bacon with mushrooms. Add the sauce to a boil over low heat, stirring constantly. When the carbonara sauce is ready, connect it with spaghetti, mix and turn off the plate. It's time to serve the dish to the table.
Correctly made sauce turns out silky,homogeneous and very tasty. When the pasta is ready, it should be put on a plate and sprinkle with freshly ground pepper.
