To make wine from gooseberry in the homeIt is necessary to know a few subtleties and observe the technology. Having several different recipes, you can find the most suitable for yourself. Where should I start? With the selection of suitable containers and making sourdough. The best option will be glass bottles with a capacity of 10 liters. But if you are preparing a larger quantity of the drink, 18 liter plastic bottles from drinking water are perfect.
No good wine from gooseberry will workwithout a good wine sourdough. You can cook it yourself. This should be done about two weeks before the moment of making the drink. We will need freshly picked berries of raspberries. Successful conditions for collection are daytime and dry, sunny weather. Remove the ripe raspberries from the bush, remove from it sepals and twigs. But, in no case do not treat with water.
Chop the raspberries.For two glasses of berry puree we take half a glass of sugar and one glass of well water. The resulting mixture is poured into a glass jar and, closing the neck with gauze, put it in a dark and warm place. Since the start of fermentation, we wait four days and strain the resulting mixture through a fine sieve. We throw out the mash, and the fermented juice is used as a wine ferment. To prepare ten liters of wine drink it will take three hundred grams of this raspberry juice. You can prepare a starter for each serving of wine or use instead of it one hundred gram of sludge after the preparation of the first batch of the drink.

From five kilograms of red berries we make a puree withusing a meat grinder or a food processor. Dilute it with boiled water, keeping the proportions. Ten glasses of berry mass will require one glass of water. Add 200-300 grams of the prepared starter and pour the resulting mixture into a prepared container. Cover it with gauze and stand in a warm place for about three days before the fermentation.
Filter the juice from the pulp, dilute it with water inthe same amount, add one hundred grams of granulated sugar per liter of liquid. Fill the resulting solution in the same container, close with a rubber glove and leave until the end of the fermentation process. Re-filter the drink, getting rid of the sediment. We pour wine on glass bottles, close them with stoppers and put them in a cool place for 3-4 months for infusion.

Berry puree from five kilos of gooseberrydilute five liters of 25% sugar syrup, pour into a prepared container and leave for ten days for fermentation. Every three days, thoroughly mix the mixture. Filter through a fine sieve, completely getting rid of the pulp. Pour the juice into the same container and close it with a rubber glove. Leave for a month and a half for complete fermentation. After that, gently merge the resulting wine from the sediment. We pour it on glass bottles, plug the lids and leave to infuse for two months in a cool place.
Homemade gooseberry wine, prepared according to any of the presented recipes, turns out to be a beautiful golden color and has a unique delicate aroma.
