Ukrainians prefer mainly vareniki with sweet fillings. In Italy, dough products with different fillings are called "ravioli", in Uzbekistan - "manta", in Russia they are more fond of, of course, dough with meat stuffing - "pelmeni".

Vareniki can be cooked with any filling.It can be fruits, berries, mushrooms, vegetables, cottage cheese and much more. How to cook dumplings? Very simple! Take the usual unleavened dough, it puts any stuffing, vareniki cook in slightly salted water and served hot to the table with sour cream, with butter, with different sauces. The flour for dumplings is taken with wheaten, the highest grade, and the dough is kneaded in several ways - without butter (lean) on kefir or yeast. By the way, yeast dumplings can even be baked in the oven. For lazy people who love this dish, there is a wonderful recipe for lazy vareniki. How to cook vareniki "lazy"? It can, probably, even a child. The dough is immediately mixed with cottage cheese and special dumplings are made, which are also boiled in salt water and served with sugar and sour cream - an excellent dish for breakfast.

To prepare dumplings with cottage cheese (60-70 pieces), you will need the following products:

- for the test - ½ kg of flour, one egg, one teaspoon of salt, a glass of water;

- for the filling - 700 grams of cottage cheese, 150 grams of sugar, one teaspoon of salt, two eggs, 150 grams of sour cream, 100 grams of raisins and 50 grams of butter.

First, of course, prepare the dough.Knock together a flour mixer with water, salt and egg. Then, adding flour, knead by hand a steep dough. Form the ball, cover with a cup and leave for half an hour to "rest." While there is time, we will prepare the filling. In a bowl, we put cottage cheese, add eggs, salt, sugar, raisins and sour cream, mix it evenly and very carefully.

We proceed directly to the modeling of vareniki.Roll out the dough in a thin layer (no more than 1 mm in thickness), use a glass to make circles 8-10 cm in diameter, put a cup of mug on the mugs and patch the edges. You can do this with a fork. We put the finished vareniki on a wooden kitchen board, sprinkled with flour, so that they do not stuck. Boil the water (about 3 liters), well salted (3 tsp) and portions of dumplings throw there, so that they were not crowded. We stir them with a noise so that the vareniki do not stick to each other and to the bottom of the pan. As soon as they come up - they are ready. Carefully, so as not to damage, we take them to the dish, add ghee. Serve dumplings should be hot with sour cream or berry syrup.

How to cook vareniki "lazy"?

"Lazy" vareniki will be a great breakfastor even dessert, and their preparation does not require special skills and a lot of time. To make dumplings, you will need: a glass of flour, half a kilo of cottage cheese, two eggs, sugar to taste, about 70 g of butter and sour cream. Curd needs to get rid of large lumps. To do this, it is better to wipe it through a sieve, add eggs, butter melted and sugar, a pinch of salt. Stir thoroughly and add flour. Roll out thin "sausages" with a diameter of not more than 3 cm, cut into equal pieces, lightly squeeze, giving a dumpling shape, and throw in boiling salted water. Once the curd dumplings come up, get them noisy and pour oil. They can also be baked in the oven under sour cream.
