Prepared by-product (thoroughly cleaned fromdirt, especially in the ear canal, and singed) soak in cold water overnight. Then boil for one and a half hours with pepper and bay leaf. Cut into strips. Three carrots and three onions (per kilogram of ears), grind and fry in oil. Then add ears and stew. Dilute a tablespoon of flour with broth and dissolve two hundred grams of sour cream in this liquid. Season with a mixture of ears, salt and simmer on the fire until thick.
